COVID19-related signage posted within the food service area, hand sanitizer readily available for customers on service counter, as well as for staff. Observed that only take-out is being served and indoor seating is not provided. Product thermometer readily available for use. Discussed that trays of fried chicken must be covered once completely cooled to 45F. Steam table: wontons 156F.ĭiscussed and observed proper cooling procedures for fried chicken (observed to be in process of cooling on trays during inspection). Unit thermometer displayed 46F.Īll steam table and rice warmer temperatures properly maintained and measured to be greater than 140F. Requested that staff monitor cooler temperature and lower thermostat to a lower setting. Kitchen staff indicated that cooler had been shut off briefly for cleaning, and had just been turned back on. Rice, within the lower compartment, was measured to be 46-47F. Chicken and shrimp, within the upper compartment, were measured to be 46-47F.
Observed that several food items within open-top cooler, across from cookline, were not held at 45F or less.
